Recipe Name: Fruity Snowballs
Servings: 12

Edy’s® Slow Churned® Yogurt Blends -Vanilla (6 cups)
½ c. Del Monte Canned Peaches, drained
½ c. Del Monte Canned Apricots, drained
¼ c. Fuji apple slices
¼ c. Mango slices
½ c. Bear Naked® Banana and Nut Granola

Steps:

  1. Melt the yogurt blend until fully liquefied.
  2. Pour the yogurt into individual cupcake sections in the pan.
  3. Cut up the peaches, apricots, apple and mango slices.
  4. Put the cut-up fruit into each yogurt cupcake section.
  5. Put the cupcake pan into the freezer and freeze for 2-3 hours.
  6. When serving, put Bear Naked Banana Nut Granola around the Fruity Snowball on a plate.
  7. Enjoy!

Christine Kim, Alexandra Scarangella and Shannon Herbert of Charles DeWolf Middle School, Old Tappan, NJ., entered as a group. Mrs. Mishler, their LEAP teacher for the gifted and talented, allowed the girls to use the recipe contest as a class project. Even though the recipe preparation was done at home, the girls explored recipe ideas, delved into nutrition topics, and researched food photography and writing in class. Their tasty "Fruity Snowballs" snack recipe could serve as a healthy dessert too.
