Recipe Name: Spinach Spin-Wheels
Servings: 30-50 Spin-Wheels (10-20 servings)

13.5 oz. can Del Monte Fresh Cut Leaf Spinach, well-drained
1-1/2 c. low fat ricotta cheese
2/3 c. light mayonnaise
1 c. low fat mozzarella cheese, finely shredded
1/3 c. fried turkey bacon, finely chopped
6 stalks green onion, finely chopped
¼ c. water chestnuts, finely chopped
½ tsp. garlic powder
8-10 spinach tortillas (10”-12” size)
Optional: Prepared Salsa

Steps:

  1. In a large bowl, mix the first 8 ingredients together.
  2. Thinly spread the mixture on the tortillas.
  3. Tightly roll up the tortillas.
  4. Refrigerate overnight in covered container.
  5. Slice tortillas into 1”- 2” servings.
  6. Serve with salsa (optional).
