Recipe Name: Healthy Kid’s Cocktail Cubes
Servings: 8-12

2 – 3 oz. pkgs. Lime-flavored gelatin dessert
2 envelopes unflavored gelatin
1 c. boiling water
11 oz. Del Monte Mandarin Oranges (drained)
15 oz. Del Monte Healthy Kids Enriched Fruit Cocktail (with juice)
16 oz. low-fat cottage cheese
½ c. low-fat vanilla yogurt
½ c. low-fat evaporated milk
(Garnish) Del Monte Mandarin Oranges (a few held back from can)
(Garnish) Maraschino cherries

Steps:

  1. In a mixing bowl, dissolve both gelatins in boiling water; set aside to cool.
  2. Add remaining ingredients to gelatin mixture; stir well.
  3. Pour into a 9” x 13” pan. Chill.
  4. Cut into 1” cubes. Serve in individual serving dishes.
  5. Garnish with Mandarin oranges & Maraschino cherries.
