Sample Recipe Outline and Ideas

Name of Recipe: Sugar Snap Peas with Mint and Lemon
Number of Servings:  4

Ingredients:    
1 pound fresh or frozen sugar snap peas, trimmed and strings removed
2 tsp. olive oil
1 garlic clove, minced
1/3 c. loosely packed chopped mint leaves
2 tsp. grated lemon rind
1/4 tsp. salt
Juice of 1/2 lemon

Steps in Preparation:

  1. Fill a bowl with ice and water. Bring a pot of water to a boil over medium-high heat. Add sugar snap peas; cook until bright green and still a little crispy, 3 to 4 minutes.
  2. Remove with a slotted spoon and submerge immediately in ice water; drain.
  3. Heat oil over medium-high heat. Add garlic and sauté 1 minute.
  4. Add peas, mint and lemon rind; cook 2 to 3 minutes, until thoroughly heated.
  5. Add salt and lemon juice. Serve.

  • Simmering Soups or Stews - Soups make a great side dish or soothing main meal. Try a warm and spicy vegetable or bean soup!
  • Convenient Wraps and Pocket Bread - Create veggie and lean meat fillings for wraps, pocket bread, and bierock variations as a healthy main dish!
  • Sauces, Relishes and Toppings - You can add interest and extra fruit or veggies to a meat dish with sauces, relishes and toppings!
