Mexican Brunch Biscuit Bake and Mighty Milk

Mexican Brunch Biscuit Bake
Preparation Time: 15 minutes Baking Time: 30 minutes Serves: 8 servings

Ingredients:
1-10 count can and 1-5 count can of buttermilk biscuits, 1-15 oz. jar chunky salsa, 
1 bunch green onions, chopped
, 1 cup shredded reduced-fat Monterey Jack cheese, Cooking spray

Directions:

  1. In advance, keep cold ingredients refrigerated; preheat the oven to 350 degrees.
  2. Separate the biscuits and cut each into quarters.
  3. In a large mixing bowl, toss the biscuits with the salsa, green onions, and cheese. Then, transfer the mixture into a 13 x 9 inch baking dish coated with cooking spray.
  4. Bake uncovered for 30 minutes, or until the middle is fully cooked. Serve.
  5. Clean work area and utensils with warm soapy water. Rinse with clean water.

Mighty Milk
Preparation Time: 5-10 minutes Serves: 6 servings

Ingredients:
8 ice cubes, 
2 cups 2% milk, 
2 bananas, 
4 Tbsp. frozen orange juice concentrate

Directions:

  1. Put all ingredients in a blender.
  2. Cover and blend for about 20 seconds.
  3. Serve in small paper drink cups.
  4. Clean work area and utensils with warm soapy water. Rinse with clean water

Taste and Learn Activity
Materials: Nutrition Facts labels from skim, 1%, 2% and whole milk

  1. Explain that milk is a source of saturated fat (a fat solid at room temperature, usually found in meat, dairy and processed foods).
  2. Ask kids to look at Nutrition Facts label of each milk type to identify a) fat content and b) calories. Ask them to explain how to reduce the amount of fat in the recipe. (A: By choosing low fat or skim milk, we reduce the saturated and total fat for a healthier heart and body.)
  3. Ask kids to determine the number of MyPlate Dairy servings in one serving of the recipe (A: 2 c. milk ÷ 6 servings = 1⁄3 c. serving) and recall the benefits of calcium.
  4. Discuss the different times of the day the recipe could be made. (Examples: as a breakfast drink, a snack, or mealtime “dessert shake.”)

Ask kids to pretend they are restaurant owners and write menu board descriptions that market the recipe as a healthy drink. Suggest they come up with their own recipe names.
